Domaine de Chevalier is located in a clearing in the middle of a forest, which protects the vines from extremes of temperature. In fact, Chevalier is a sort of secret garden, far from the limelight. This is something of a paradox for such an excellent wine, among the greatest in Bordeaux.

'I have been living in Shanghai for quite some time now, and from the many dishes I've tried, there's no doubt my favourite is Xialongbao. These small dumplings originate from Shanghai but are seen throughout China's south. They are stuffed with meat or vegetables and seasoned with a few drops of vinegar. I could recommend countless restaurants that serve these, and I love to eat them with one of our mature white wines or even the 2007 red Domaine de Chevalier.'
